Get to know some of our favorites:
Moloukhia with Chicken
Moloukhia is a green leafy vegetable similar to spinach and kale. We cook the leaves with deboned chicken marinated in lemon and garlic and serve the dish over rice pilaf. The bright flavors from the lemon and garlic pair so well with the greens and chicken. This is a Levantine dish that is very popular in the region. It is also quite healthy, as the leaves are rich in vitamins and antioxidants. Moloukhia has been eaten for centuries, with records of the plant’s cultivation dating back to Ancient Egypt. This versatile vegetable is used in cuisines all over the world, especially in the Middle East and Africa.
Okra Stew with Beef
This dish consists of okra with chunks of tender beef in a tomato sauce and is served over rice pilaf. The sauce mixes nicely with the rice and makes for a very comforting meal. This is a Lebanese dish that is called “bamia” or “bamia bi lahme” in Arabic. Okra originated in East Africa and eventually made its way North to the Middle Eastern region almost a thousand years ago. The okra plant blossoms with beautiful white flowers, and the piece we eat is actually the seed pods!
Chicken Biryani
Biryani is a mixed rice dish with rice, meat or other protein, vegetables, and spices. The exact origins of this dish are debated to this day by chefs and historians alike, but there is no question that this is one of the most popular dishes in South Asia and nearby regions. In 2019, it was the most ordered meal from India’s most popular food delivery app, with approximately 95 biryanis ordered per minute! Our take on chicken biryani comes with oven-roasted chicken that is served over rice with a vegetable blend that includes peppers, onions and potatoes.
Kafta in the Tray
This dish includes a generous serving of baked beef kafta layered with potato, tomato, onion, and green pepper served over rice pilaf. If you are unfamiliar with kafta, it is made by mixing ground meat, typically beef, with parsley, onion and spices. This combination of fresh vegetables, meat, and spices creates a wonderful flavor. There are countless dishes that can be made with kafta, and this is one of our favorites. Simple and delicious, this Lebanese staple is very popular for families to make at home.
Chicken Maklooba
Our maklooba comes with oven-roasted chicken served over a bed of basmati rice mixed with fried eggplant and cauliflower. Maklooba is an Arabic word that literally means “flipped over,” and stems from this dish traditionally being layered in a pot and then flipped over onto a serving dish. This dish is native to the Levantine region, and is especially popular in Palestine. There are records of maklooba being prepared that date back to the 13th century!
